The question isn't what pad someone else uses, or what pad works best for all around use. The question is what pad has MORE bite. Every different pad has it specific use, but it should be cut and dried what has the best bite.
kodpkd: Asking a limited population of people who are still following this post what pads they like best isn't necessarily going to get you to what you like best. There is lots of data. as I am sure you well know, available. Here is one such set. Notice that some have to get pretty hot to start gripping well. My suggestion at this point is head off into the outside world and pick out something for yourself. I've used Hawk for years, here is data on how their various pad compounds perform.
After measuring the master on my car. Finding it was a 1 1/8 inch bore, I ordered a "1 inch bore". I measured the new one. The measurement is the same as the one on the car. Either I was sent the wrong master or I didn't measure it correctly. Does anyone have a 1 inch master you can put a measure on?
Not sure on the vette, but it is not unusual to have one master cylinder body machined for different bore sizes.
That would explain the large opening that you measured.
In that case, the master us usually stamped with the bore information.
If not stamped, the other option is to pop out a piston and measure it.

The master I bought clearly said it was a 1 inch bore. I did pull the piston out to measure it.... Yep it's 1 1/8 inch bore. Seeing I ordered it just to get a smaller bore, it's going back.

That's what I said..... I think it was new. At least it didn't say rebuilt. On Amazon from A team. It would be a good deal if you have power brakes. MC, + proportioning valve, manual adapter and brake lines for $100
I installed the new 1 inch master cylinder and organic pads. The car stops better. I can now make the tires chirp when I hit the brakes hard. I have a new proportioning valve. It isn't an original 68 corvette unit. Newer style. The car has the original 68 unit. If the old valve is working properly, would it be worth installing the new valve? Seems that it wouldn't make the braking better.

I would not bother with the proportioning valve, it should not make a difference.
Brake pads have a much greater influence on performance.

Hard to say about the SP8XP wear, as I have only put a few hundred miles on them.
I have power brakes, but poor engine vacuum.
In trying different pads, I have gotten from not being able to lock up crappy old bias ply tires, to being able to lock up grippy 18" performance tires.
I see no reason that this would not work better with your set up.
