I think you'll need to replace the intake manifold to make it fit under a stock hood, even with the stock air cleaner, and especially if you want to reuse your Q-Jet.

That I don't know the answer to. When I looked into putting a ZZ6 into my 80, I figured my best bet was to buy a ZZ6 short block, and add AFR heads, a low intake manifold (either for a Holley Sniper EFI system, or my stock Q-Jet), and use the stock accessories. On my car with no A/C and no power steering, that's just the water pump and alternator.
You mentioned without Power steering. is that going to be an issue also in the C3 ?
I chose to eliminate stock power steering in both of my C3s (manual in one, and Borgeson in the other), but there are plenty of C3s that have no issues.
I only mention this to point out that my need for a serpentine drive setup on a ZZ6 is very different than yours. I am sure you can get the power steering pump to fit and work, but I can't even begin to suggest how to do it.
The ZZ6 engine with Serpentine setup fits pretty well overall and only needs a couple of tweaks.
The intake manifold on the carburetor version is a bit high for the base model hood. Even the ZZ6 EFI version needed a shorter air filter or drop air cleaner setup.
The serpentine setup fits except for the idler wheel that I just turn around (had to grind a bit of one end to make it fit). Some folks said that they just removed it all together. Obviously needed a new belt length.
