I just replaced mine last night. I contemplated keeping it, but there were so many splices in it, old electrical tape, wire starts off as one color and it changes 3 or 4 times before it reaches its destination.
So, I'll just store it all in a box and pushed to the back of a cabinet or something.
Don't throw anything away! someday it will come in handy for something or someone else. I have all of the original parts I've replaced in a big tote box.
If your new wiring has been proved-out and all is working as expected, cutting off all the Packard connectors from the old wiring is a GREAT idea. Keep them connected as matching sets with a little wire left hanging out. You may need to just splice onto that stub after removing the insulation. Put them all in a big Zip-Loc bag and label it WELL so you (or someone else) can't pitch it by mistake.
