Welcome to the forum. I am going to move this to the C3 General section where I hope you will get some responses to your questions. You may also want to link the thread there to one you could post in the Southern California Regional section of the forum.
The car is 40 years old. For insurance I would consider collectors insurance. The rates could beat what a regular agent would give you. Plus with most you get to establish and “agreed value”. Not sure how a regular insurance company would establish a value. But I like knowing what I’ll get if the cars totaled.
Personally, I use Hagerty. The first collector insurance said it wasn’t insured if parked at a store. Basically, you open the garage, drive and park back in the car in the garage again. Plus, it was covered at auto shows. My point is to read any insurance contract you get and understand what is and is not covered. Plus know what you’ll get if someone hits you from behind and totals your car.
Welcome to the forum. I have used the National Corvette Museum insurance now for a number of years and have found them to be great to work with. NCM insurance, speak with Adam Bocca, he will take good care of you.

Congrats on the car. I don't know a collector car company that will insure a car without garaging it. It may be better to store the car at a storage facility inside a closed unit. I had one of my vettes stored and my collector car insurance company covered it. Jerry
Responses so far ar correct. Collector car insurance is inexpensive but you must store it indoors. The cost savings on the premiums may pay for the storage fees. As infrequently as you intend to use the car, the storage facility solution may not be much a an inconvenience. Your new acquisition looks very nice by the way. Congrats and good luck.
I currently have my 73 insured through State Farm and I can drive it as much as I want with agreed value for what I purchased it for.
When I complete my restomod project I will switch over to Hagerty or NCM as mentioned above, only because the agreed value will be so much more.

I agree wholeheartedly, having that reassurance of the "agreed value" is key as is having a zero deductible and reasonable yearly cost. Hagerty seems to check all those boxes though I do not have a garage and the car port prices in San Diego are insane.
I've heard great things about NCM and will definitely consider them and be sure to speak to Mr. Bocca. Though alas I do not have a garage so I don't think NCM will cover me.
Thanks so much, I may just have to look outside of San Diego for reasonable storage options. I'll do the math and see what makes the most sense between regular insurance and private lot parked with an outdoor cover vs collected insurance and storage parked.
