Hello can anyone tell me why my 75 L48 is running cool (165 degrees) after after it’s at operating temperature..radiator gaskets are all good, changed thermostat (180) as per owner’s manual although someone told me 195 is correct 🤷♂️ .. installed new hoses and flush out rad also checked temp at housing with IR gun still running cool .. thanks

The number you referenced is when the thermo BEGINS to think about cooling. Not the maximum, as you know.
Many of us prefer to start cooling sooner than others 160 - 180 degrees is fine.
The 195 is for smog engines trying to burn off Greta Thornburg mist. That temp 195 would be my max on a warm day, I hope.
Those Thermo-Guns can be had on Amazon. Just point it at the water-neck and see if it reads anywhere near what your gauge says.

Interesting your owners manual states what thermostat you should run.
195f is 75 unless yours very early?
it would be helpful to know what emissions your car has because some of those vacuum switches may not switch on or off until it reaches a minimal say 180° and 195° thermostat. If you don’t have any emissions concerns or vacuum switches in regards if too cool, I would stick with the 180. Here’s a thread about thermostats that I learned.

verified motor is 165.
damn. new to me, the usual vette complaint is hot.
thermo 180, should be closed yet water is circulating.

It's not unusual for the temperature gauge to read high or low (as in your case), Willcox used to sell a potentiometer to fix this. Where exactly are you measuring with the IR gun? They are usually set up to measure a high emissivity surface, if you are measuring on a reflective (or partly so) surface then the gun will read low. I've just fitted a 180F thermostat in my car, my temp gauge reads 155F but an infrared gun on the painted intake manifold says 180F and quite a bit less on the thermostat housing (which isn't chrome but is somewhat shiny).
Seriously? You have a C3 Corvette that actually runs to cold? You must be the first.
Can't tell you about the time and money it took to get mine back DOWN to normal after engine mods increased the H.P.
(Would run out of ink trying to write it all out).

Mine also will run cold, it effects the heater, the MPG, and if you know your car you can feel the difference in performance. In my case it took one of those wiz-bang high flow 195 degree thermostats to get it stabilized around 190-5 I've been told it's not great to run it cold as the moisture in the oil never evaporates but I'm not sure how it will do that at 195 either.
Check your timing, , re-verify your gauge, borrow a different tester, try a 195 thermostat... You can always use the old winter truck drivers trick of putting a piece of cardboard over part of the radiator...just kidding...

I shot IR gun at the thermostat housing , 167, than at the top hoses 165, last the bottom hose 115

I wouuld check the thermostat you put in in a pan of water with a thermometer to see when it is opeinning. I usually run a 160 thermostat in the summer and a 180 in the fall. With th ecold fall temps my big block will stay cold and I dont get much heat out of it. The 180 thermostat is the fix for that.
What are your outside temps that you are driving in...go with the 195 t-stat and check again....you are one in a million not having a hot vette
