I found AMK here on some thread but their website is not doing well right now and I don't see Corvette Master Kits listed.
The Assembly Manual for 1980 will list part numbers for a lot of the fasteners used on your Corvette, though it's not easy to track down hardware with just a part number. Some hardware is included in original Corvette Parts Books if you have one, but most of the hardware was found in the GM Standard Parts Catalog. The Standard Parts Catalog is a great resource if you can find one, but it was designed for the dealer to be able to look up a bolt's or nut's part number by a description of the bolt or nut. It's not much help if you don't know what type or size bolt you're looking for.
hunt4cleanair is right about the NCRS 1980-1982 Corvette Technical Information Manual & Judging Guide giving you a description of many of the fasteners used on your Corvette. I was part of the team that worked on the 80-82 TIM&JG back in the early 90's. Surveys were sent out to owners of 80-82 Corvettes asking a number of things about their cars, including a description of a lot of the car's original hardware's head markings.
The now defunct Paragon Corvette used to do a fantastic wall chart showing most major Corvette fasteners, with photos of each head mark, the size(s) and application(s). These are invaluable if you can find one. Paragon's catalogs also had the fastener chart spread over a few pages in the back of the catalogs. One of their old catalogs might be easier to find than an old wall chart.

It's true that hardware stores can be a ready source of fasteners.
These fasteners tend to be generic though and so may differ slightly from the original for various reasons
Whether or not this matters can only be answered by you.
Snotty people often refer to it as 'screen door hardware'.

Here's an example.....
Note the tapered shank. The part of the bolt that passes through the rubber busing is unthreaded to protect the bushing.
Note short threaded portion.
Note grading slashes and finish.
There is no adjustment in this bolt. The slotted nut can be torqued tight so the cotter pin can be installed. This insured consistent / constant ride heights for the rear suspension.
