OK this is crazy, I've changed the auto to a 5 speed, added rear coilovers but can't figure out how to remove the **** from the headlight switch.
I jumpered the switch a few years ago when the resistor for the dash lights went out. Now that I have the dash apart for the hydraulic clutch and hydra-boost conversion it seemed like a good time to replace the switch.
You need to get at the back side of the switch. If it is like a '69 you should be able to reach it by taking the upper side of the dash off. You should be able to see or feel a small headed pin with a coil spring below the head. Push that pin and the **** will pull out.

That's correct. You reach your hand up and grope around the switch behind the dash. On the one side of the switch you will feel a little spring-loaded pin or button. Push the button in and pull the headlight ****/rod assembly out of the switch. Note that this will leave your headlights in the "on" position, so you need to disconnect your battery.
