And replace those valve cover bolts with a set of ARP studs. Makes life a lot simpler to install gaskets and covers plus ease of use.

some machine shops have an electrical device that vaporizes away nasty things like broken off easy outs a little at a time. I think you're in over your head here, time to punt and call around and see who can get it out for you, pull the head, and take it down. Unless you're willing to risk trashing the head and replacing it...

Hey, how hard would it be to tap a new hole in the head? Casting seems soft enough (I accidently found that out with the drill bit). Couldn't I just move the hole over a little, and drill new hole in valve cover gasket? Only need to go about 1/2" deep or so....

I would say to that idea. Take it to a machine shop, it's a decision you'll thank yourself for later.

Good luck!
You're right. This was a pretty good read. I particularly like the section on easy outs, though I think it may be a little exadurated:

"EZ-Outs" Forget about them. These are those tapered drill-bit-looking things that you drill a hole in the center of the bolt shank and then insert them into the hole with an "unscrewing" motion. I have tried cheap ones, expensive ones, spiral ones, square ones. I extracted a bolt with one once out of 434 tries, and I think it was loose to start with. The theory sounds good, but in practice they are worthless. One definition of them from my Altar of Manhood page is "E-Z OUT BOLT AND STUD EXTRACTOR: A tool that snaps off in bolt holes and is ten times harder than any known drill bit". Once they snap off inside, you have no chance of drilling them out. Forget about them. If you see a set really cheap in store, buy yourself an ice cream instead. The ice cream will be more effective in getting a snapped of bolt out. Am I clear on this? "
