When I start her up, first thing in the morning, she runs REALLLLLLY rich....so much that it almost envelopes the car in a shroud of smoke. (Holley 670 Street Avenger) This lasts about 30-40 seconds then the engine smooths out, RPM's go to 1,200, ...no more rich smell, smoke or anything!!. When she warms up, I tap the accelerator and the RPM's drop to 800 (600 in Drive. As far as the rest of the day...she starts right up and purrs like a kitten...even if it sits for most of the day or if I drive it alot. I checked the plugs...normal (no rich indications or oil burning). The car performs perfectly (acceleration, cruising, starting, stopping etc etc etc)...it's just first thing in the morning....COUGH COUGH COUGH
How do you "lean out the choke"?

Rotate it to the "lean" position.
Better yet - yank the entire choke system off the carb and run the carb with no choke - a correctly set up Holley seldom needs a choke system to start and run well.
I really would like to keep the electric choke. When you say "Rotate it" do you mean the large black round housing for the spring (the one with the 3 screws holding it to the side of the carb)? If so, do I rotate it to the left or right
The edelbrock that came with my 71 didn't come with a choke and I drive it as long as there is no snow on the roads right down to as cold as 5 degrees fahrenheit and it starts just right. If you can't get the choke adjusted right try it without the choke just to see how it goes.

Not sure on the holley but I think you would turn to the left (not much 1/8 turn of a flat screw driver). then restart and see if it made any chg.

Loosen the 3 screws and rotate the entire housing to adjust the choke.
Clockwise (lean) will open the choke quicker.
It should be marked "Rich" and "Lean" right on the choke housing.
You can test the 12V connection with a test light or just turn the key on and watch the choke blade.
It should open gradually over a period of a minute or so depending on where you have it set.

I turned the black housing 2 clicks clockwise....saw the choke blade "open" just a little....and now it is working perfectly. THANKS! I was tired of breathing gas fumes at start up....

You likely need to replace and adjust your choke pulloff - the pulloff controls start-up mixture and choke setting.
