So I found a block with the perfect date code for my car, 1970 big block...the problem, if it is a problem, is that the motor is bored .125 over....what are the implications of trying to use this block for a street engine?

IF you have or know of a 512 bare block with an april/may 1970 stamp I am interested...but not $2500 interested.
Some early HP 4bolt main BB Chevy motors have really thick cylinder walls but, I would definatley have it sonic tested for cylinder wall thickness before I parted with any money for it. There are lots of blocks around if you know where to look, try a couple of auto machine shops and check with local Drag/Boat racers who frequently use BB Chevy motors.
I abused my 509 ci chevy 1000 hp injected for years in my racing boat and then sold it to guy over 10 years ago who installed it in his 69 drag camero. He still runs 5-8 events a year and I had just done a quicky rebuild with hone, bearings, and rings.
This was just a 454 out of truck. it even survived ingesting water in the scoop that dented the 13.2 pistons crowns
Install 8 Sleeves. Go standard bore. For $800 you can afford the extra machine work. Properly installed sleeves shouldn't be a issue on a street engine.
I've got three sleeves in my block due to other reasons, but if its done right you'll never know the difference. Some people even claim motors run smoother sleeved due to the increased cylinder wall stability. SO if the block is period correct and your chances of finding the exact block you need in the near future is slim go for it and get it sleeved. Just make sure you really trust the machinist.
Hot Rod magazine split a cylinder wall with nitrous on a 318 chrysler in one article and sleeved it in the next and threw more nitrous at it. you could stick your hand thru the hole before they sleeved it. simply amazing if you ask me.
