Corvette "Black Book" has all the stats, options, colors and [I believe] the quantities of each unit produced. You can buy them in major book stores (Transportation section).
How can we know how unique a car is? As far as color and equipment? Where can this information be gathered?

You can't. People who state that a car is 'one of X' have invented the number by doing some simple percentages. These are nothing more than a guess and a naive one at that. I have proved over and over that my own car is less than one of one.

Chevrolet did not keep close records on the vettes until after they moved to Bowling Green from what I understand. You can do some math and extrapolate the numbers like Mike Ward suggests.

As others have said, definitive information, especially for an early car, is pretty difficult to find.
A rare car may be very interesting or it may not be, for example some 3-speed transmission cars were built before the 4-speed became standard. Not too many people care though, for many, they're just an oddity.
