Now, I'm not defending anyone here, but don't forget the need to shield the plug wires so the electrical noise wouldn't bother our radios. That is most likely why they are routed as they are. I don't think they were too interested in how things would be repaired, just get the needed results.
Here's something interesting. I once worked with a woman who worked in the prototype area for a while at Packard Electric (where most GM wiring used to come from) and she told a tale of how some engineers wanted the new C4 engine wiring harnesses to use all black wire for "looks". I don't know how much time and money they wasted before they finally gave up. She had to show them how difficult building such a harness would be. Could you imagine trying to trace down an electrical problem with all the wires one color? OUCH!
