Your in the same boat I am. Looking to add bolt on upgrades to my stock 1981 Vette for more HP & Torque. Purchased new and has been parked for many years, only 40K+ miles on it. Check with JEG's, Summit Peformance automotive, and/or Eckler's.. They offer a complete heads package with intake, cam, rockers, etc. for around $2,500 for a 410HP upgrade.
