What is the best way to remove the paint fron the brake console? Every time I try to touch up a few spots with a spray bomb, other areas blister. It always looks like it's going on well until the last coat. I try not to put the spray on really wet so it won't bubble. I don't want to sand it & remove the leather grain look it has. Thanks.

It sounds to me like you're putting the coats on too 'wet' and it's lifting the coats below.
This problem may also be caused by the paint you're using now not being compatable with the original paint on the console.
You might need to remove all the paint with a gentle striper (like citus stripper) and start fresh.

If it is out of the car use lacquer thinner and start again. And use dye, not paint.
