Default another operating temp question

how long does it take your C3 to get to full operating temp on a cool day (lets say 65 ambient)

assume no heat crossover is being used.

180 thermostat

OE rad

i notice mine hits full temp on the gauge in less than 15 minutes easy.....BUT it seems another 10-15 minutes of driving before it really drives like its fully warmed up....

About 10 minutes. Do you have a thermostat installed? Has it failed in the 'open' position? If you remove it, and the 'flapper' is still open, the stat is bad. If you have no T-stat, it will take 15-20 minutes to fully warm up.

without the heat crossover it will take longer than normal since your intake manifold stays cooler for a longer period of time.

180 high flow tstat. the gauge reads up to temp in about 10 minutes.

what im saying is the car does not RESPOND like its fully warmed up for another 10-15 minutes of driving...

thats because you have no heat to the intake manifold

Aluminum heads and intake with no heat crossover on mine. Because there is no warming under the carb, fuel doesn't vaporize as quickly and sometimes causes a stumble on acceleration until thoroughly warmed.

Are you using a mechanical choke? Mine takes about 5-10 minutes for the coolant to come up to temperature, but sometimes another few minutes before the choke fully disengages and the car starts performing like it is fully warmed up.

Is you vacuum advance hooked to ported or manifold source. If ported switch to manifold and initial cold driveability issue will improve.

An electric choke on a Holley is pretty much infinitely adjustable so you should be able to get it to not come completely off until the engine is warmed. The black bakelite houseing is rotated towards RICH to delay the choke coming off, and LEAN to speed it coming off. There is also a fast idle adjustment screw to get the idle the speed you want while the choke is on.
