Most likely cause is a broken speedo cable or a worn out drive gear in the transmission. Both are relatively easy repairs, once you are under the car.
Unfortunately, the '71 has the 2 cable system. It is actually better, because it eliminates the cable "whip" you get from having a longer cable (jumpy speedo)....but I'm not sure you can get exact replacements for either section. As mentioned, the lower cable is probably the one that is broken (if it is due to a bad cable). But, check out the speedo gear in the tranny first; the square-drive end usually cracks/breaks as the old plastic gear gets hard from age. When it cracks/breaks, the cable just spins in the end. Replace that gear with one having the same number of teeth--if your speedo was correct when it last worked!
My speedo was jumpy, so I replaced the 2 cables with the single aftermarket [long] cable. Then, the speedo was jumpy ALL the time (rather than just at elevated speed). So, I pulled out the new cable, cleaned out the original cables (dry graphite lube...no grease or oil, please), bought a 90 deg. adapter for the connection at the tranny, straightend out the bend in the lower cable, and put it all back together. Not perfect, but not jumpy and it operates smoothly again.
