I believe you do have to pull the engine due to the longer length of the 5-speed. Some of the people here have modified the solid tranny mount on the 4 speeds. Do a search on 5-speed installs, there is a lot of info here.
ps: Might add that I would disagree on converting a auto being easier. Changing the pedals was a little bit of work. Welding in my cross shaft mount wasn't too bad since I have removable egg crates.
You do have to take the engine out to put the 5 sp in a 4 sp car. Unless you want to cut the crossmember. It sucked, but it was worth it. Engine out, or replace pedals, neither is a picnic.
Your '71 looks very hot. I agree that BJ and Mecum are trading some restomods at very high prices, however, they are modified much more than tranny and some HP. Most of them have custom fabricated bodies and interiors. At the end of the day I very much agree with your statement about being the "current owner" and its "your car". I am leaning toward going with the 5 speed and just saving my muncie 4 speed to reinstall if I ever sell my car.

I agree with you, I used to be about originality on Vettes. Unless it's a well documented Top Flight or Bloomington Gold...C-3's are not bringing the $$$.
The tastefully modified cars wiith new AC, fuel injection, overdrive manuals or autos are the way to go!!

That really sucks. I do like instant gratification, or at least somewhat instant, but might have to put up with the wait. Going to call them on Monday and see what's up.
