Rule of thumb for a GEN I SBC is about 1 pt CR for each 10cc change in combustion chamber size...assuming the same gasket (and so, quench) is used.
Most head changes on stock GEN I's use the FelPro 1094 gasket to establish the appropriate quench - a bit of searching on here will give you all the background you need.

Yes; it's a rubber-coated MLS gasket and works with anything.
Someone will pop up and say it requires an extremely smooth block and head deck; they're confused about the difference between an MLS gasket and a rubber-coated MLS gasket like the 1094 which is much more tolerant of a rougher stock-type deck.
