Those blue gaskets in the Holley kit are non-stick, meaning you can take the bowl and metering block/plate off several times without damaging the gaskets. I don't know about the gaskets in the O'Reilly kit. Perhaps a counterman can help you?

After having rebuilt only a few hundred Holley carbs, here's my personal, humble, objective opinion:
Don't ever rebuild a Holley with anything but a Holley kit. The non-Holley kits are pure garbage, and should be thrown in the trash. The parts don't fit, don't look right, don't work right, and are of horrible quality. If you use one, you're an idiot.
Pete, I am a counterman, and they are not non-stick gaskets. I haven't taken a look at the O'Reilly kits because they don't have them in stock at the store I work at. We do have the Holley kit, and Lars has spoken. Holley kit it is. I think it was like five bucks more, or something like that. You have any papers on the rebuild process Lars?

Just my very humble opinion.

Why sugar coat it, Lars? Tell us how you really feel!

Jordan, I was a counterman at a motorcycle dealer for a number of years after I retired. A good parts guy is a real asset to the store and to the customers. We sold mostly Honda and Yamaha OEM parts so the job was probably a lot simpler than dealing with all the car parts you have to know about.

It can be a pain sometimes when customers don't understand/trust what you try to tell them. Most, if not all the employees come to me when they don't know a part/question. It feels good.

My surnames O'Reilly (no relation) and i use the genuine holley kits. The reusable gaskets are brilliant and will survive many reuses while changing jets while tuning.
