All summer long I have been wondering, where is this yellow dust all over the interior coming from? I finally discovered my seat foam is coming out through the seat cover.
The seat cover itself is in great condition my guess is the previous owner recovered the seats but left the foam.
Has anyone tackled this job? any tips would be great.

The "yellow dust" is coming from the disintegrated 'scrim' foam in the channels of the seat front/back. Unless there was something spilled into the seats that would cause the main body foam to do the same, it is probably still OK. You might want to disassemble one of the seats/covers to check it out before you spend the buck$ for new body foam. But, if you want to rebuild the seatcovers by re-stuffing the channels with new foam, that can be done and I have a paper that details how to do it. It is not complicated; but it does require some careful work on the inside of the seatcovers, in order to save them. Below are a couple of photos of a completed seat back and the finished interior of my car after rebuilding the seatcovers.
check out the Corvette America video online. It is a set of three or four videos that takes you step by step. Make sure you get the 2 or 3 tools you need. Hog ring pliers, seat cover install tool, and probably want some new hog rings.
Very easy job to do. I did both of mine in 3 or 4 hours. I sit up 1-2 inches higher now and no longer feel like I'm sitting on metal.

I agree with 7T1's assessment.... the yellow dust you're seeing is from the thin foam sheet that's sewn into the cover to give it it's definition and pleated appearance.
The thick seat foam itself compresses over time but I haven't seen it disintegrate into dust. It seems to just get denser as it compresses.
The yellow dust problem and condensed seat foam will give the seat covers a 'loose' look; and is often more obvious on the driver's seat.
