I have a 225 70 15 on an 8 inch rim in my spare tire my 1977 and it fits ok. What model year is your vette? Later model I would not know about.
If you cannot close the drop down carrier it is adjustable. I pulled mine out a few weeks ago and filled it with air when I replaced my Rear Diff Fluid and had to readjust the brackets after I filled up my spare tire with air. I had to make more room once it had 35 PSI of air in it and readjust the back 2 bolts for more room. Who knows the last time the spare was dropped out of my car since I am the 4th owner.
I had to remove my spare tire carrier to get to the rear diff fill plug since it probably was never changed before in the 44,000 miles my car has on it.
It will fit with adjustment on the back hold downs. The front bolt is also adjustable and all are a pain in the butt since mine had some rust. Hit them with PB Blaster let it sit for about 1/2 hour then fixed my problem.
I dont know which models this relates to but 1979 came with a space saver tire (mine is still the original, hope I never get a flat), I have no idea where you would put the 255-70-15 tire if you get a flat coz I'm pretty sure it wont go in the carrier, perhaps on your front seat to get you home? Dunno?

Have you adjusted the 2 bolts toward the front of the carrier that it hangs on so they're dropped all the way down and adjusted the single lock bolt in the rear to it's full length?
I'd think this would allow you to get a 225 tire in your carrier tub since that's only 1 size larger than the 215 tire that was original.
