The AIR pump and tubing can be removed without the computer noticing. Save all parts for later in case you end up selling the car, just in case the new owner wants all that stuff. Also, make sure you don't need the emissions stuff for inspection in your area. If you do, there are ways to make the AIR pump work with headers, but it requires some modifications to the headers.
Sanderson might make (or can make) a set that has the AIR tubes. There headers are "short" and can use the remaining exhaust pipes so you do not run into issues of trying to run duals on a car that did not have dual exhaust. It can be done...but the muffler shop will work to get it done. Trying to get two tube Siamesed together and fit where one pipe went...and still have to employ a bung for the O2 sensor. And then fab up mounting brackets so support it all. I did one and installed a "2-in/2-out" catalytic converter for a customer. The engine was seriously beefed up and needed in that case.
You do know that you basically have tubed exhaust from the factory now...don't you???
FWIW: the stock 81-82 manifolds are some of the most efficient GM ever produced; they amount to short tube headers. Keep the stock set and you won't have to worry with emissions testing.
You won't see any real gains with aftermarket headers unless you also go to dual exhaust.

You won't see much and it's a lot of work for 5hp. I went to true duals from pypes and removed the cat. I can tell you it made a tiny bit of difference in the mid range and it runs a little rich until I get the car hot! The O2 sensor needs to be hot to work properly and the cat being removed makes it hard to maintain temps. I most likely will move the O2 closer to the manifold...
A simple muffler change and Hypertec chip/PROM will give you the sound and performance you're looking for cheaper and more power with 1/5 of the work.
