I have seen a lot of this vintage with a raw edge on the carpet that is bonded to the seat back [ours is an 81] In pictures I have seen this edge trimmed up somehow. Do some cars have a sewn on edging?
Is there a moulding available to trim this edge?

I believe no edge on the carpet was factory. I have seen the carpets for the seat backs having a sewn in edging....but I believe they were aftermarket. And I personally do not like them as much as the raw edge. This is if when they are sewn...they have to be just right to fit in the area that the carpets are glued and stapled in.
There is a trick to getting the carpet to stay glued. It takes time...but I have not had one come back with the carpet falling away from the seat back.
My 82 had the ruff edge from the factory. The new carpet kits do need trimming sometimes and I've glued mine twice in 4 years.
I would say get the best adhesive you can find, sand the seat back area you are gluing, test fit and then follow adhesive directions to the letter to avoid problems like I had
