I would avoid any heads with the raised exh ports, it could be a real headache with the pipes!
We do a high number of 100% stock-appearing BB builds that are also 100% fully rollered, hyd-roller lifters and "real" roller rockers. They all fit under every factory cover we've used with or without power brakes!

P.S. The only area that becomes an issue is the poly-locks on the exhaust rockers and 1/2 set (8) Crower "short" adjusters takes care of that! The build below, for a Chevelle, is fully-rollered with stock v/covers and single-thick gaskets. Vette covers also go.
I do have power brakes and power steering. The rocker cover on the left side is going to get interesting- I'm going to use shaft rockers. Not a lot of room but I'm hoping enough to get it to happen with maybe a slight mod. The exhaust being raised .3 to .400 won't be a problem- that's why I did the mockup. The exhaust in my avatar- Hooker, Jet-Hot coated, with 2-1/8 primary tubes. This is the 3rd set that's been on the car since 1971- 1st ones rusted thru, I replaced the 2nd set because I wanted to go with the coated ones.

The full exhaust came from Stainlessworks. I don't think they list the side pipes any more, but give them a call and tell them what you're looking for. I'll dig through my files for the motor mount part numbers. Thanks.
