Removing the rear bar will just cause the car to understeer/push at the limit and is the way most cars are setup to handle at the limit. GM used the OEM style rear sway bar to dial out some of the understeer of the C3's. Most C3's do not have a rear sway bar-only the BB cars and gymkhana Sport suspension SBC C3's had the factory rear sway bar. You will be fine.
