YES...I have done a few..and that is when I opened them up ....the inside was worthy of my time.
Not holding steady speed....can depend on if you are going down a hill or up a hill.. AND if you set it at 50MPH..and it goes to 60MPH..this can be adjusted when it is still in the car..and the same goes if the speed drops from what you set it at.
You can disassemble it, clean it out, re-surface the friction disc and put it back together. I'm sure there are web pages (video/text) that show you how to do this on the internet. Google "1978 GM Cruise Transducer repair" and see what comes up.

Re-surfacing disc? Can do this myself? Like starter solenoid, copper

Mine did the same thing. I took it apart and cleaned it up. Worked again for a little while then started acting up again. Finally just replaced it with a re-built unit.
How it looked initially.
Then after buffing with a Dremel buffing wheel and Polishing compound.
This drive was squeeky and not well lubricated so I drilled a small hole to intercept the bushing for lubrication.
I just put an electric cruise control on my 79. Works great and uses a "modern" turn lever control switch. It was easy to install thanks to Dakota Digitals help line. I know I know not stock, but almost nothing on the car that works is.

REELAV8R, thanks for the great pix on this thread. I've got mine apart now and am curious if you used any lubrication on the plates after you buffed them, like a dielectric grease. I assume there's an electrical connection between the 2 plates as they rotate against each other... correct?

I did not use any grease. I think it's a friction connection if I remember right. There is a magnet and it sandwiches the copper plate somehow. I don't believe an electrical connection was involved as far as those plates go.
You want nothing between the plates. One is supposed to turn the other. When engaging, they are supposed to allow some slippage; but you don't want them to slip when cruise is operating.
