You said you had a crate engine? If so you might have a reveres turn water pump for serpentine belt.

The way the cooling system has to work properly is coolant needs to stay in block long enough to absorb heat/Coolant has to stay in radiator long enough dissipate heat.
This, however, is an old myth.
This is why the factory uses thermostat that is in the 190's.
The factory uses high temp thermostats to reduce emissions.
have you tried opening the heater core valve and letting the water circulate through the core to see if it will stabilize your temps. I know it sounds odd but there are many threads on here that members have bypassed their heater core and have this issue.

I do have that installed. I need to change the coolant anyways, so I'm going to drain/flush and put new coolant in...I'll do that with the heater core back in the loop.
Full flush/replace of coolant and all is well. Also found out that 210 on my temp gauge is approx 180-190 per the IR gun. The car drives pretty well now without any off idle stumble, etc. I had a couple pops on decel from one WOT run, but that was the only time in 40 min worth of driving. Do you guys think I should look into that more or stop messing with the whole thing and just enjoy the driving. Thanks for all the help; this site is a must for the novice vette guy!
