I only make 370 lb/ft and 200 HP at 2800 with a 3.08 and it does just fine.

And I say this because a dyno test was done on a sbc 427 nothing altered at all except carb,started with a 750 and went to 850 and the hp gain was sorta shocking all of 20hp and better torque . And it was on the climb but as you can see the test stopped at 6200
Of course I can not say that will work with your set up but 750 seams a bit small for that set up your running.

BTW - I am in upstate NY near Saratoga. I went right by you on my way home from South Dakota when I was driving the car home about 2 weeks ago.
Having trouble finding anyone to tune this carb in my area. Does not like to idle below 2000. Any suggestions?
