I am in need of a center console and gauge cluster to house my custom speed hit gauges. Does anyone know if anyone makes a blank one that we cut ourselves, or of a good shop to do a fiberglass build in NC? Or any other solution for that matter.

I bought a 12" x 12" x 1/8" sheet of ABS that was textured on one side and fabricated a new front for my gauge cluster to be used to install a double DIN head unit. All of my gauges have been replaced by a pair of 3 in 1 gauges that replaced the speedometer and tachometer.
Instead of the textured look-you can go w/ a brushed aluminum look.
Just flip over the ABS and use a green scotch brite pad-brush gently back and forth.
Follow that up w/ some glass cleaner.
If you want to leave part shiny- say like around the edge- just mask off w/ electrical tape.
And if you want to do some idiot lights- but don't want a cheesey LED that only you know what it's for...
You can get a square switch-flush mount- several of them on eBay- cheap ones are fine- that are backlit. Pull out the switch and then cover with a dash light symbol. You can get these from a junkyard cheap. I like the late 80's M-B as there are nice and big, fit great plus easy to remove.
