Regardless of the weight I always buy the heavier of the 2. I always go for the 1000 lb engine stand. When you start torquing the heads or anything I feel better with the slightly more expensive 1000 lb. stands. I have bought 4 of them on sale.

Yea the little ones are pretty scarey.
Even with the 1000lb ones they bounce around pretty easily..

78 L-82 complete with fluids - 640.7 lbs
78 L-48 complete w/ fluids - 622.4 lbs

does not include a/c or other options - this is just the motor.

Make sure you get a 4 wheel model, the 3 wheelers are scary,.

Make sure you get some quality fastners, at least grade 8 or so to secure the engine.

I have a 3 leg light dty one and it is a bit scary. When I do any type of heavy torquing I rotate the engine so I am pulling up on the bolt. ie When torquing the heads I place them on witht he engine level then hand tighten a bolt or two then rotate the engine so the heads are perpendicular to the ground and pull up on the wrench so I am lifting the engine up not pushing it down. Not sure if it makes a bit of diff but it sure makes me fell better.

BTW Use grade 8 bolts to attach the engine to the stand. The bolts are what scare me the most, not the stand itself.
