I don't have my 69 on the road yet but I can test run in on jack stands. I just put the stock shroud and clutch fan back on. It feels odd to me when it is running ALL the air the fan is moving feels like it is being "throw out" between the 12 o'clock and radiator cap position. None is blowing straight back over the motor evenly, like my Camaros. Is this unusual?

It's important to remember that's it's NOT the air blowing around the engine that cools it… it's the air being pulled through the radiator core that cools the coolant that's flowing THROUGH the engine that cools it.
For that reason it's important to have all the radiator, shroud, and core support to hood seals in place so the maximum amount of air is moved through the radiator, not around it.
Even the hood needs to be closed to maximize the air the fan is pulling through the radiator core.
