Anyone out there know the stall speed of a stock convertor in a 74?

Just a guesstimate but I believe around 1500 to 1800.

I think it's a little less than that, around the 1200 region.

I put an 1800 stall converter on mine and it's definately stalling higher than before.

From what I've heard, stall ratings are very subjective. Some say you can only compare ratings for one manufacturer's converters. So there may not be much similarity in the behavior of GM's 2100 stall converter and Brand X 2100 converter.
