Stalls off the line
I have a 81 that almost seems to stall(for lack of a better word) leaving stop lights or after it has idled for a bit. When leaving a stop sign, it seems to sputter just for a second, then takes off like nothing was wrong. Could this be a fuel adjustment issue? If i keep the RPMs up while at a stop, it doesn't do it. Other than that, I have had no other issues or fuel related problems. It starts right up, runs great, but has that weird stutter.

Sounds like a failed accelerator pump - very common issue with modern pump gas. Visually verify that you are getting an instant and strong accel pump discharge from the discharge nozzles upon the slightest movement of the throttle lever. If there is no pump shot, or a very weak pump shot, replace the pump.
