Looking for a full CAN bus solution for my C3. There are a couple options out there, Infinity Box and MUX Wiring to name a couple. Are there any other companies to look into, or other solutions to consider?
I am starting from scratch with my electrical system and would love the functionality of a CAN bus system. Components that I have that will be integrated with this are:

Don't know about a full CAN solution but I can tell you the Edelbrock Pro-Flo 4 utilizes the built in CAN bus to communicate with the CompuShift Sport controller for my 4L60E transmission. Kept me from needing a second TPS for the transmission. I'll be interested to hear how the Dakota Digital HDX works out for you.
The Pro-Flo seems to have some nice functionality. I'm going with a TKO 600 so I wont have any transmission connectivity. Hopefully it won't be too long to give you feedback on the HDX!
What is the benefit of the CAN, in layman's terms? I have a Holley Sniper EFI on the shelf, and it also has CAN. I won't be using digital gauges or auto trans.(maybe I'll use auto in another car?).

CAN stands for Controller Area Network and is basically a computer network. It allows various electronic devices to communicate with each other without the need for a central host computer. It was primarily developed for automotive use and allows all the various computers in a vehicle to send data back and forth to each other.
In a modern vehicle every component that needs data from a sensor (O2, TPS, Oil temp, etc) can have it without having to have their own separate sensor.
In my case, it allowed the EFI computer to send throttle position data to the transmission computer which kept me from having to have a separate Throttle Position Sensor just for the electronically controlled transmission.
I know Dakota Digital sells a BIM for the pro flo 4 that uses the CAN connection
It lets the gauges work with the EFI.
I bought and installed it, on my 71, but my car isn't ready to run so I can't comment on its usefulness.Yet.
Only problem with CAN is that many vendors are making their CAN products proprietary, so you can't easily add you own or other vendors devices unless you spend lots of time decoding and snooping around. I know AEM fully documents their CAN so it's easy to get any info from any of their engine management or gauges.
I have a Holley Stealth Sniper EFI system and it uses CAN BUS to allow it to see gauges and even use an aftermarket dashboard. Holley sells all the gauges and parts to allow the use of the CAN for controlling the engine. As for the rest of the older C3 car I am not sure of why you would want to convert it.
The primary aftermarket systems are for engine management. I would love to have all the engine information gauges using CAN in place of the original wiring. I believe we will start seeing more aftermarket CAN parts as the new automobile industry keeps going that way. I would suggest you take a Peek at the Holley Information as they are clearly heading that way.

It would be nice if Holley published their CAN protocol like some other vendors have, so non Holley vendors or DIYers could integrate other devices. But that would mean that Holley might enable competitors and that's not likely IMHO. So I'm guessing that unless it's a Holley owned company or a license/royalty is paid, you may be hard pressed to find an a complete CAN solution.
My C3s engine management is an AEM infinity. I read the CAN info from the AEM into my DIY transmission controller and touchscreen that controls everything in my C3. Driving modes, digital display, fans, alternator, fuel pumps, drag launches, etc.
I am wiring my Infinitybox system right now. It has allowed me the flexibility to add lots of features that would be impossible with a Painless style system. Jay Harris is very responsive and helpful.
