Exactly which is why the FSM is needed to understand it's function.

This is a new waterneck that doesn’t look like it will work,but did go to my wiring diagram and at least know what they are.

This is the one that goes to the intake,right under the upper radiator hose,but yellow and black is the Coolant Temp sensor.

This is on the drivers side head,and is dark green and black and is temperature switch

Temperature switch on drivers side has on pronge,and the passenger side head is light blue and black and it’s the engine temp switch.and it has two prongs,and it comes with the wire harness with the starter motor,which I replaced that whole harness.

And yes this is 1981,with computer carburetor,which is the whole purpose of replacing the heads,intake carburetor,hopefully to let it breathe better,oh,and of course headers. And someone mentioned a service manual,which I do have ordered,but do have the assembly manual,which is very useful.

And here is the Engine temperature switch,it says it’s light blue and black,lol....I wouldn’t call it light blue though,and this fits in the passenger side head.

Another picture of coolant temperature sensor,oh and of course the oil temperature switch is dark green and white,and even I know it’s on the oil filter.

Had to groove out the header flange a little to get the temperature switch screwed in without hitting header,already tested fitment,fit perfect NOW.

FWIW, the passenger side head is the switch for the aux electric fan. The driver side head is the sender for the temp gauge in the cockpit. The sensor in the intake manifold, with the funny circular connector, goes to the 81 ECM. If that ECM has already been removed or bypassed, it should serve no purpose, and that hole can be plugged, or repurposed.

I use a similar, 2-wire sensor in a similar location for an independent, and very accurate, temperature measurement. On the left is that sensor (which RockAuto also shows as being correct for an 81 car, perhaps there was a wiring connector change, or it's only correct for 82). On the right is my temp switch for my electric fans.

Thank you so much, I was curious if it had to do with the ccc ,because that particular yellow/black wire was some I disconnected from carburetor.but,thank you,a Plug looks he’ll of lot better.
