Default Oil change

If you only drive your vette maybe 500 miles a year and the rest of the time it is in the garage, how often should you change your oil?

Modern oil change monitors that detect very little usage display change oil now at one year.

My engine builder recommended every 2 years for the oil and 4 years for the filter – that's driving 500-1000 miles a year. One caveat is that the engine is never started unless it has the opportunity to reach full operating temps to evaporate moisture. Acid-forming condensation in the crankcase is detrimental to the oil and bearings.

The real problem here is that you are not out enjoying your car nearly enough. Get out and drive it! It's good for your soul!
If actually using the car just isn't possible, concider selling it to someone who will. It's bad for a vehicle to just sit.
And, change the oil once a year. The trans and diff every 5 years. Brake fluid every 4 years.

Depends on whether you are using organic (dino) oil or full synthetic. I would not run dino oil more than a year. It oxidizes with age and loses lubricity, etc. Full synthetic does not have such issues. It must be said that HOW you use your car WHEN you drive it matters, also. If you let the car get fully warmed up and allow any collected condensation to clear from the crankcase, then good for you. If you just fire it and allow the battery to recharge for a couple of minutes....not so good.
If you manage your engine well, full synthetic could be good for a couple of years or more. However, because of the value of our collector vehicles, I usually change oil every year with the full synthetic oil I use. Maybe not "necessary", but I know that it COULD be a benefit....somehow.

P.S. When I did use organic oil, I would always change oil/filter every 3000 miles (maximum) or every 3-4 months.

Hloey crap - you must have nothing better to do.
In my C1 I only change tranny /rear end lube when I change tranny's or diff' - so far 5 - 10 years due to ratio changes.
Brake fluid only if I actaully redo brake hoses or wheel cylinders 10 - 20 years at times LOL

And you're in Australia !
I would think the ideal climate as far as any condensation issues in your fluids ??
