I don’t know their reasoning for saying they put off a lot of heat, but I didn’t ask why.
I do know that uncoated headers put off a lot of heat so when they told me that I asked them if they offered ceramic coating at which time they told me no and if I had them ceramic coated it would void the warranty.

Its pleasing that one maker still does headers for BBC powered Vettes.....and more importantly 2 1/8" tubing.
Per the ARH site, looks like they only make 1-7/8” and 2” primaries. Seems like the old Hookers are the only 2-1/8” primaries out there.

I have a shop in town lined up to do a custom 3” exhaust.
I was perhaps lucky to get mine about 10 years ago when a car shop bought them-in for a client.....but he probably didn't tell them his car had air con so wouldn't fit. Even with a stock diameter 2 1/2" exhaust the collector flange was only 4 or 5" in front of the crosmember and totally in the wrong position. It would have meant a 'S' shaped connecting pipe.....which obviously would badly impede exhaust flow. Of course had I hah known this would be a major problem I would have modifiied or replaced the crossmember with cut-outs and strengthening it to suit. Unfortunately it was only when I collected the car a few days later from the exhaust shop that I saw the underslung system.

Unless building a big inch and/or race engine, 2" primaries are fine.
