Noticed recently that my rear end is leaking, (the Vettes) - I looked underneath and believe it is coming from the differential drain plug.
Question - is this just a simple drain plug like the oil pan (bolt / crush gasket washer) or is there something special back there. Also what's the best way to get under the car - ramps or jack up each side and use jack stands?
It's a pipe thread, different from engine drain plug. Pop your doors and hood a little before jacking car up. They flex. Always use good jack stands (no cinder blocks) too. Either method of elevating car would work. Diff. fluid should be even with drain plug opening when full. Make sure to use posi-traction type fluid if yours is low.

To insure a better seal on the drain plug you could wrap the plug with teflon tape before putting it back in. That way you wont have to crank the holy b'jeasus out of it to get it to seal.
