I have used Bilstein's on my Porsche's, and I think I like the Koni's a bit better. Bilstein make a great shock, but I do like the ability to adjust for the track.
So, if you don't spend much/any time on a road course, then Bilsteins are the way to go. If you want to hit the track more than once a year, I would look at the Koni double adjustable's. A little more dough though...
