Default Holley Carb Gurus... Help..

Why is this carb so much cheaper than some of the other Holley 750s? Do I lose some of the adjustability or tuning ability? Anyone using this carb? <This is from the Summit catalog> I want to mate it to a dual plane RPM Air gap on this crate motor. What do you think?

That model 4160 is their entry-level carb. It does not have a secondary metering block (uses a stamped steel plate), the parts and components are crudely finished, and it does not have idle fuel discharge on all 4 barrels (no idle fuel crossover passage in the baseplate). Therefore, it does have limited tuning capability, and it's not the best choice for a well-cammed engine. The carb will run reasonably well on near-stock engines and mild mods, but the higher-end carbs do run better....

The motor you have is a pretty aggressive build for a street engine. I would highly suggest using a carb that employes 4-corner idle metering screws and the ability to do some tuning. My own personal preference on a carb that meets that requirement is the BG Speed Demon 750 mechanical secondary - no choke. This carb has 4-corner idle screws, but more importantly, the new Speed Demons have an idle air bleed adjustment screw that eliminates the need to do any throttle plate drilling on big-cammed engines. This makes tuning really nice, and will make that engine produce the best idle quality possible. The carbs run about $450 through Summit.
