Wow, this is a loaded question.
For the street there are many tires worth mentioning.
My favorite, that I CAN AFFORD!, are BFG KD 275 front 315 rear.

But, Michelin Pilot cups
Eagle F1
Kumho (MX) and Nittos (RII or NT-01) are good priced and sticky.
If you want competition tires and aren't worried about mileage, stay away from R compound or Close to R compounds, as some Michelin and Pirellis are(Look at the Ferrari 599GTB, they are SOFT with low numbers for longevity).
The mos important factor is the Driver, and what you are capable of doing, how is your suspension , etc etc

If you can find some Goodyear Eagle F1 Supercar tires, they have lots of dry grip. They were made in the 275/40-17 size, but were dropped not too long ago. There may still be some around.

I have the newer Falken Azenis RT-615s. They are supposed to be much better in the rain than the older ones. I have them on my daily driver Miata and am down to about 40% tread and don't have a problem in the rain with them. They still work just as good in the rain as other performance tires I have tried and much better than the all season tires normal people buy.
