it really seems that a ton can be taken out. Are there any thin spots specically that I should be careful around?

On the AFRs leave them alone and bolt them on.
L98s...they need help everywhere.
If you can get a better seat and valve put it there for starters.

Those roll kits are Ok for smoothing but they wont port a head to see any "real" gains;it takes much more
