'89 thumping or knocking
I can put a break over bar in the tensioner and really tighten the belt and it will go away.
It also will gets hotter than I think it should, it will not maintain a constant temperature even going down the road it will keep climbing. it wont over heat on the highway but it will get up to about 220-230. It will over heat in stop and go traffic.
The fans are coming on. it has a new 180* thermostat. It's not losing water. The belt seems like it maybe loose because the tensioner "bounces" when running.
I'm thinking belt and tensioner is bad and this is causing the belt to slip on the water pump and not pump water like it should. The back side of the belt is really shiny and slick where it contacts the water pump.
any ideas?

Take a close look at the belt tensioner and make sure the tapping noise you hear isn't the tensioner tapping its own mounting bracket/stop. A serpentine belt can wear over time from normal useage/age and cause the condition your describing....which typically occures at low RPMs. The solution might be as easy as changing the belt.
For the over heating issue:
You may want to remove the upper radiator shroud and clean the debris out from in-between the AC codenser and the radiator......you'd be surprised how much stuff gets sucked in there.
