I used Headman Elites on my 91 and liked them., they are only $400. I was also able to get rid of the Precats in the y and use it to bolt straight into the main cat. You could cut the flange of your cat have a muffler shop weld it to a pipe and mate it to the y. you could keep the mufflers. I bet you would have the sound you are looking for.

Your cats, especially if original to the 87 are probably acting as very restrictive mufflers so yes, removing them will change the sound a lot.
You could punch out the center cat but the pre cats would be almost impossible to punch out..

No sensors, you only have an O2 sensor but it's just down from the manifold on the drivers side, nothing else that the car will know about. A lot of guys will just fold over the end of that air tube, it doesn't do much, just supplies very low pressure air to the cat from the air pump. You can also just pull it out of the rubber hose at the engine and clamp a plug into the hose (a 1/2 copper plumbing cap fits perfect).

Yes, but not without buying an expensive idler system to replace the pulley, you can't just use a shorter belt, it won't route properly without being held up at that point.
