over heating at idle.
If the fans are running at those temperatures, that sounds OK an it would not sound like an electrical problem.
If you replaced the thermostat with a correct LT1 stat, then you have to go to the next logical place which would be the radiator.
However;
I am assuming there is no debris blocking the air flow if front to the radiator.
When the engine is cold, check the flow in the surge tank. You should be able to see flow in the tank for the heater core at anytime which indicates the pump is working.
Does the coolant look normal. Just thinking of a possible leaking head gasket. You can buy a check kit from a parts store.

Coolant looks perfectly normal. It kept dieng on me today 3 times within a mile and it ran ok for .5 miles then died on me 6 times pulling into my neibhorhood and 3 times trying to park it....

Sounds like you may have 2 problems. The dying problems sounds like the ICM (ignition control module) may be defective.

if so, perhaps the water pump was re-installed WITHOUT the the coupler so actually the water pump is NOT spinning/pumping coolant.
Have you confirmed coolant flow (lower coolant level in pressure tank and confirm flow into tank from small upper hose which enters just below the 'radiator' cap).
