Hello, I have a 1985 Corvette with a Miniram, Flat Tappet ZZ409 cam, AFR 195 Heads, Hedman Long Tube 1 5/8" headers, 58mm Throttle body, 3.75s, Dynomax true dual exhaust, and a bunch of other miscellaneous modifications.
In my tune my cooling fan is set to come on at 92* C, which is about 198* F. Before I installed the AFR 195 heads, the temp used to go to 206* F, and start dropping down. Now it goes to 225* F and starts dropping down. But the fans are still coming on at 198*F.
fans do not control your temp stats do. What stat are you running. if you are sitting there ideling it takes awhile for the fans to pull enough air across the rad to cool the cooleant to bring the temps back down
I had a similar situation on an engine I rebuilt increasing the power some. It was more power and more heat was generated (my assumption). I ended up installing a larger radiator which helped control the temperature.
I'm sure there can be several other situations and answers.

Any chance the radiator needs a flush.
I flushed the whole system a few months back, and I've since added new coolant.
I think it may be due to the aluminum heads pushing out the heat faster and the heat being absorbed by the coolant faster than the old iron heads... Unless there is a problem with the thermostat?
It's a 195* stat I believe, it's a factory replacement.
