I have no problems with my new to me, 1987 convertible. It stalls and rev's up and blow some grey smoke in the morning upon first start. My mechanic could not replicate and said it was a good car and to have fun.
First start of the day? Fuel prime and pressure. Fuel pressure should jump to 42 psi when key is turned to run. You should be using regular grade gas, premium when not required can cause cold start stall. Carbon build up more common in automatic transmission models. Drive in in second at 55 for 5 miles or so see if it helps. Top tier gasoline now fairly common is designed to leave fewer deposits The 87 TPI does use a cold start injector if it's not working right it could be the cause. Did you mechanic use a scanner when he checked car or just start and drive it? Gray smoke could be condensation which is nomal.

Yeah, he did all that and said he could not duplicate but said it was a fine car and enjoy - I'm only trying to see if this isn't symptom of any greater issue as it's my nature to ward off problems well in advance. Update as of driving it today - so after I drive for about 15 minutes it won't start up again- I have to punch the gas to get it to start - other wise it's good,................................... . ? ? ?

Did all what? Check the cold start injector to see if it was leaking and dumping gas into the car?
When you are punching the gas, it puts it into a clear flood mode which causes the injectors to cut off. You need a fuel pressure gauge to see what it is doing at the time. Would be nice to confirm that you are having fuel pressure that is right. Makes me thing the engine was flooded. Maybe Coolant Temp Sensor? Hard to say without a scanner and an IR Thermometer to see if it is reporting right.

Most auto parts stores will loan you a gauge.
On your fuel rail (where the injectors are) theres a shrader valve that looks like something youd put air in. Screw the gauge on, turn the key to "on" report back to start with
