The way I see it, it would require a new rear clip, convertable top/mechanism, x-brace, and a front winshield. After that just a little body work & paint.
just cut the top off with a chain saw. be sure to wear protective eye wear 'cause lots'a crap will be flying through the air. smooth out all the ruff edges with duck tape and paint over it. remember, everybody makes fun of red necks 'till their car breaks down.
There's a kit advertised in the Vette mag's. Take off the rear glass & attach this rear "deck". I'd be much more inclined to do that than butcher a perfectly good coupe. Probably cheaper too!

Do not use a chain saw to cut through metal...it is dangerous. Sell it and buy a convertible, but if you feel you must change this car use a hacksaw. The chainsaw will buck back when it hits the metal and likely put a very nice part in your hair! Please make sure your will is up-to-date.
When cutting fiberglass with a saw, including a chain saw, be sure to ware eye-protection and a respirator. You don’t want that stuff in your eyes and especially not in your lungs...
