When you said ". . .hot idle. . ." what temp (F.) are we talking about?
~220 F.

In fact, I don't think I've ever seen it go lower than 50psi under any conditions. Seems too high.

I've heard ideally that it should be bwteen 25-40 at idle, and get up to around 60 or so at cruising.

But don't quote me on it.

The mechanic said that he checked one of the bearings and said that it was fine. Also, the pump was just replaced 8 months ago or so, as was the sender.
Checking one bearing only proves that one bearing is good. If any bearing has excess clearance then it will affect oil pressure. I don't understand if he had the pan off to check one bearing why he didn't check them all or at least all the mains. Did he tell you what clearance the one he checked was? As far as your problem goes as long as you have at least 10 PSI at idle and it is jumping above 30 PSI under acceleration then I would not worry about it.
