Yes, it can be done. Here is a picture of the finished results of polishing a set of OEM magnesium valve covers off my 92. You can compare them to the painted ones currently on my LT1. They go on this week.
I've polished aluminum covers only to have them look like hell in a very short period. Can you clear coat them?
The valve covers get pretty hot, so I think you'll need to use a 500 degree paint. I don't know if they make a clear coat in that range of temps. I'll let you know how well the polished magnesium works out. I think it's going to take a little care to keep them shiney.

wow those are sweet how do you polish down past the pitting and stuff and keep the surface relatively smooth and flat? We won't talk about what my valve covers look like after being "refinished"
